CHEF MANAGER

 

MAIN PURPOSE OF POST:

 

To provide a high standard of catering service to the client’s employees within the agreed financial parameters whilst adhering to all statutory and company guidelines and the Eat Well Live Well philosophy

 

RESPONSIBLE TO: Area Manager

 

RESPONSIBLE FOR: All subordinate catering Team Members

 

KEY RESPONSIBILITY AREAS: MANAGEMENT OF CATERING SERVICE:

To ensure that all food is prepared and cooked to maximise the nutritional value and to comply with the recipe database

 

To ensure all supplied are from nominated suppliers and that food is stored in the correct manner

 

To ensure all food is labelled and presented in line with the company standards and that all marketing material is correctly displayed and up to date

 

To ensure that food is ready for each designated service; that a full range is available at all times and that all Team Members are briefed prior to each service

 

To hold regular formal and informal meetings with the client to ensure the standard of service is reviewed

 

To put forward any ideas to the Area Manager for service improvements and initiatives to develop the customer experience

 

To immediately highlight any concern areas to the Area Manager that could impact on the services


HYGIENE, HEALTH & SAFETY:

 

To ensure all procedures and documents are in place and that all Team Members have access to the correct equipment and PPE to undertake the duties designated to them

 

To ensure the log book is completed each day and that all records are safely stored for inspection

 

To ensure that the cleaning rota is maintained and adhered to at all times

 

To record any accidents and near misses and to report any failure of the facilities or equipment

 

To carry out regular Risk Assessments in all areas of the kitchen and servery

 

FINANCE:

 

To ensure all company financial controls are in place and fully completed each day

 

To ensure all Team Members correctly record any transactions and adhere to portion sizes and wastage control guidelines

 

To ensure that the UES system is completed in accordance with the dates set and that all supporting documents are forwarded to Head Office

 

To carry out regular audits on all financial areas including safe and till checks

 

To adhere to stock and cash targets set by the company and that targets for food cost and labour cost are met

 

HR:

 

To ensure all Team Members are recruited in accordance with the company procedures and that all documentation is provided to Head Office

 

To ensure all Team Members are trained in all aspects of their role and that training is correctly recorded

 

To regularly review Team Member performance and identify areas for development or refresher training

 

To complete the on line training as required and to ensure that all Team Members have access to complete the training required

 

To highlight to the Area Manager an areas of concern relating to performance, conduct or attendance

 

To complete the monthly pay return accurately and ensure all absence, holidays and overtime are recorded
